Paleo Hungarian Beef Goulash
- 2 lbs. stewing beef (chuck), cut into 1 ½ cubes
- 3 tbsp. olive oil
- 2 cups chopped onions
- 2 cloves of garlic, minced
- 1 can (14-16 oz) organic diced tomatoes
- ½ cup water
- 1 tbsp. paprika
- 2 tsp. salt
- ¼ tsp. pepper
- ¼ tsp. dried thyme
Directions:
1. Brown meat on all sides in hot oil using a large pot or Dutch oven.
2. Add onion, garlic, tomatoes, water, paprika, salt, pepper &
thyme. Cover and simmer 1 ½ hrs, stirring occasionally.
3. Remove lid and simmer uncovered for an additional 30 minutes
or until meat is tender, stirring frequently.
4. Cool down, serve and enjoy! Makes 8 servings.
